feat: add incident delete and clarify AI assistant settings

Wire deleteIncident() into IncidentDetailScreen with a destructive confirm
dialog. Expand the AI settings section with base URL + model fields and an
explanatory card documenting the OpenAI-compatible use case (Ollama / OpenAI).
